Bless the LORD, O my soul, and forget not all his benefits: Who forgiveth all thine iniquities; who healeth all thy diseases; Who redeemeth thy life from destruction; who crowneth thee with lovingkindness and tender mercies; Who satisfieth thy mouth with good things; so that thy youth is renewed like the eagle's.
PSALM 103 : Our heavenly benefits
Look, as it were, through a telescope that will bring it up near to you; look into hell, and hear them groan; then turn the glass upwards and look at heaven, and see the saints there, in their white robes, with their harps in their hands, and hear them sing the song of redeeming love; and ask yourself--Is it possible, that I should prevail with God to elevate the sinner there? Do this, and if you are not a wicked man, and a stranger to God, you will soon have as much of the spirit of prayer as your body can sustain.

"Seek diligently for something to be glad and thankful about in every happening and soon no search will be required."
I found this recipe in a magazine and it is incredible! A bit time consuming to make, but well worth the effort.
Spinach and Prosciutto Stuffed Chicken Breasts with Spinach Sauce.
I'll type the recipe if anyone is interested and can't find it on the net.

One of my favorite things to do is have International night. We randomly pick a country and look up a recipe native to that place.
It's almost always necessary to go to the store to find a few of the unusual ingredients, but it expands the palate.
I'm starving.......

Spinach and Prosciutto Stuffed Chicken Breast
6 large skinless, boneless chicken breast halves
Freshly ground black pepper
1 10-oz package frozen chopped spinach, thawed
1 egg, lightly beaten
6 thin slices proscuitto (I used 12)
2 to 3 oz Monterey jack cheese with jalapeno peppers cut into six 2x1/2-inch sticks
2 tablespoons butter, melted
1. Pound the chicken breasts (boned side up) to 1/8 inch thickness. Sprinkle each lightly with pepper.
2. Firmly squeeze spinach until well drained and almost dry. In a small bowl, combine 1/2 the spinach and egg. (Remaining spinach is for Cream Sauce). For each roll, spoon about 2 tbsp. of the spinach/egg mixture onto each chicken piece, spreading evenly over chicken. Top with a slice of proscuitto. Place a stick of cheese near an edge. Fold in sides; roll up, starting from edge with cheese, into a spiral, pressing edges to seal. Secure with toothpicks. Place rolls, seam sides down, in a 13x9x2 inch baking dish. Drizzle rolls with melted butter.
3. Bake uncovered, in a 375 degree oven for 35-40 minutes or until chicken is done. Remove toothpicks and slice each chicken roll (really a beautiful food when finished). Top with Spinach Cream Sauce.
Cream Sauce:
In a saucepan, melt 2 tbsp. butter. Add the remaining chopped spinach. Cook and stir for 5 minutes. Add 2 tbsp. whipping cream, 1/4 tsp salt and 1/4 tsp pepper. Cook and stir about 300 seconds more or until heated through.
I tripled the cream sauce recipe (except for the spinach)...Loved it!!!
Enjoy!
